Corn Syrup

    There has been questions and a little confusion about Corn Syrup, so I checked good old wikipedia (which always has the answer!).  Corn Syrup (which is made from the starch of maize) is actually good according to here http://en.wikipedia.org/wiki/Corn_syrup as Corn Syrup is made up of glucose.  However High Fructose Corn Syrup has gone through a different (enzymatic processing, which means they are changing the molecules) process to convert some of the Glucose to Fructose http://en.wikipedia.org/wiki/High_fructose_corn_syrup.  High Fructose Corn Syrup is only produced because it's sweeter then plain old Corn Syrup.  Corn Syrup is used in foods to soften texture, add volume, prevent crystallization of sugar, and enhance flavor.  So basically they are two completely different things.

    David please correct me if I'm wrong.

    I did also find a mayonaise which has corn syrup in it (thinking of HFCS and thought it was just as bad as sugar but now realise it's actually good!).  I cannot remember the brand name off hand but will look when I get home.  It contains soy bean oil, and I didn't quite like the taste of it, but might give it another try.  I got it from Bilo.

    Today I found Karo Corn Syrup and Karo Light Corn Syrup in an IGA but I wasn't sure whether they were OK or not.  The Light one looked better ingredient-wise as it only had corn syrup and vanilla in the ingredients but the other one had something else I can't remember in it.

    In Australia Corn Syrup (as an ingredient) is fine - its pure glucose.  In the US, its much less certain Karo (a US Product) products are not pure glucose.  I have written to them and asked but they refuse to say what is in the product other than to say it is not just glucose - they say they products do contain fructose.  If you want glucose syrup in Australia, Queen Brand Glucose Syrup is a good choice (cooking ingredients section of the supermarket).

    So in summary corn syrup on the ingredient list is fine on products sold in Australia.  High Fructose Corn Syrup is of course a bad thing.
