Coconut Flour

    David, have you ever explored the excellent work of Bruce Fife and his coconut flour recipes? Coconut flour is very high in protein (the highest protein of all flours) and of course, fibre. I'm not quite game to look up any fructose content though... I hope it's not bad news on that front!

    Hi Sandra - thanks for reminding me about coconut flour. I bought some a few months ago but forgot about doing anything with it. I have just checked the nutritional details. My (organic, fair trade) coconut flour has 7.9gm sugar per 100gm and 38.5gm fibre in that 100gm also. I'm not sure how this compares with other flour ( in terms of fibre) but I love coconut so I'll try a couple of recipes and see how they go. Some years ago I tried all over the place to buy coconut oil. Health food stores wouldn't touch it because of the myths  regarding fat and health. I pointed out to the local store the benefits of the oil and how good it was reported to be in terms of reducing cholesterol etc (read it somewhere at the time). It is thankfully easier to buy now but very expensive compared to just using butter in recipes.
