Beetroot goes with summer

    Hi David,

    Now that summer is upon us albeit wet so far, we are having salads and I LOVE BEETROOT so cooked some from scratch today using Dextrose instead of the sugar, the vinegar's ok but what about the beetroot, I know in your book it is high but was that for the tinned variety?  Ta!!

    Hi, I love beetroot too and have found that you can eat the leaves in a salad, bake it, steam it and grate it and eat it raw in salads. I havent tried to pickle it in vinegar but suspect you could steam it and sprinkle it with olive oil and vinigar as a salad.

    What a great idea to grate beetroot, I know it used to be available grated in tins but I don't think they sell it this way any more but it would be full of sugar anyway.  I am finding that since following this sugar free life I am spending more time in the kitchen (not that I am any kind of good cook though) but am having fun trying.
