You're making it all too complicated . . . just decide to give up on things that are bad for you.
That said, the fibre in the fruit does ameliorate the effect of the fructose to an extent. But it's safest to stick to two pieces (of 100 grams) per day. And avoid fruit juice (it's just like drinking fat).
I have had a long-term habit of Friday night "choccy night" which my children still do with their kids. So I buy ALDI 70% cocoa chocolate which contains 28% sugar or 14% fructose. 25g of that gives me 3.5g of fructose, which I fit into my daily allowance of 10g.
The main criteria are is you weight steady at the desired level, and you feel full at each meal?
