How Much Sugar?

    I was wondering what the verdict was on using Rapadura in place of sugar in recipes? 
    I would appreciate any advice.

    From the Wikipedia article it contains 20% "invert" sugars which comprise a mixture of glucose and fructose. Assuming a 50/50 mix that would make a total of about 10% fructose and therefore off our list. But I suppose if the jaggery was only 10% of whatever you used  it as an ingredient in then you end up with 1% fructose which is OK.

    Jaggery* (also transliterated as jaggeree) is a traditional uncentrifuged whole cane sugar consumed in AsiaAfricaLatin America, and the Caribbean.[1] It is a concentrated product of cane juice or date juice without separation of the molasses and crystals, and can vary from golden brown to dark brown in color.[1] It contains up to 50% sucrose, up to 20% invert sugars, up to 20% moisture, and the remainder made up of other insoluble matter, such as wood ashproteins, and bagasse fibers.[1]

    just use dextrose, then the whole problem of something being suitable or not is alleviated. Dextrose has none of the addictive attributes that fructose has and will cause no harm to your health.

    Thanks for your advice Freda. Unfortunately after much searching I have not been able to find Dextrose (I live in rural Victoria). Any advice on sourcing some would be appreciated. Is there a particular brand/product that I could ask a local Health store if they could get some in for me?

    You should be able to get it in the home brew section of your supermarket.  My husband gets it from Master Butchers in SA.  25 Kilo bag for $31, he does make home brew

    here is a link to the directory of Home Brew shops in Victoria...........I wonder if there is one near you.............http://pint.com.au/links/homebrewshops/victoria/
    You are best off buying from a home brew shop, the dextrose is much cheaper than any health food store and Professionalwhey is also very expensive. There isn't a brand name to it, except "Dextrose"
    Just make sure you are buying pure dextrose and not "brewer's sugar" which may have some sucrose in it.
    And, of course, if your local supermarket does have a home brew section.
