Semolina pudding tart

    Ingredients

    4 cups milk
    1/4 cup dextrose
    45grams butter
    3 teaspoons grated lemon rind
    1 cup semolina
    1/3 cup crushed walnuts
    1/2 cup cream
    1 large cooking apple cut finely
    1 1/2 tablespoons rice malt syrup
    1/2 teaspoon cinnamon powder
    3 1/2 teaspoons dextrose (extra)


    Grease 20 cm flan tin, In medium saucepan heat milk, dextrose, butter and rind.  Increase heat bringing to boil (watch milk doesn't scald) stirring regularly until dextrose dissolved.  At boiling point reduce heat and stir in semolina slowly (otherwise it clumps and forms floury blobs).
    Cover and simmer 10 minutes stirring occasionally.  Allow to cool for 2 - 3 minutes then add in walnuts and cream.  Stir well.  Pour into prepared flan and place apple on top decoratively.  Pour rice malt syrup over apple and sprinkle with additional dextrose and cinnamon.  Bake for 30 - 35 minutes at 180 degrees until cooked.  Leave standing until cool.  Remove from flan and serve with rice malt syrup (I didn't need any more than what was in recipe).

    Ive taken this from the bag of Sostanza semolina brought at Coles and converted it without regular sugar, you can use a bit more dextrose if needed but i found it was quite enough.  Also the amount of rice malt syrup can be reduced before cooking depending on taste.  I found it made a huge batch and will actually half it next time, make sure you put a tray under the flan dish as the syrup over ran the dish.  This can be eaten hot but i found it was a little sloppy, it kept well in the fridge and was much easier to cut and keep together.   Its kind of like a heavy rice pudding (only no rice).

    Also makes a great breakfast if you dont bake it, i loved licking the pot lol.

    I've deleted them from the recipe
    When eating this you dont eat a whole lot as its a heavy food, so the amount of Syrup in minimal also

    Julie, it sounds delicious. And timely, as I was only yesterday thinking of asking if anyone had converted a rice pudding recipe yet, as I like rice pudding. I also used to love semolina as a child. Both my Mum & my Nanna would make it for me. That was before sugar was a problem. I don't have porridge any more because I like it very sweet, & my sweetness of choice was brown sugar, a sprinkle on the bottom of the bowl, a teaspoon mixed in and cream & more brown sugar sprinkled on the top. My absolute favourite, so haven't wanted to try it without the brown sugar. The 2 just seemed like a great marriage of tastes.
    I'd still like to know if anyone has done the rice pudding recipe though. I like it loose & creamy, not baked & dry-ish.
    Mind you, on the other hand, not sure if I want to buy more short grain white rice!! I was using Basmati rice (low GI) but have changed to brown rice. Now I've made myself more confused, not so hard these days, seems I'm getting old!! haha

    Sylvia, have you tried the rice malt syrup in porridge yet?

    I'm going to get some Brewer's malt soon too, so hope that might taste nice added to things like porridge, along with another sweetener I guess as don't think maltose or maltodextrin is very sweet.

    No, Nadine, not yet. But it was so cold yesterday morning & today again, 6 degrees in (Sydney CBD is cold)
    I was thinking of making some, yes, I think I will try it as soon as I finish this post, I will go & cook some. I need something hot.  I woke up in front of the TV at 2.20 am again, Kev was in bed with his TV on, too, so I switched it off & tucked him in, then tried to go back to sleep myself....no good, I lay there for about 1 & a half hours, then gave up & put on my light put in my earphones & listened to the radio & did a crossword. I eventually got up at 7.15am, after dozing off for 20 minutes!!.. So, got up & washed up last nights dishes & cleaned the kitchen up, haven't had brekky yet & it's now 9.47am, so will do it now!!

    I will let you know how I go!!

    Hi Julie, how did the rice custard go? I don't think I've ever made rice custard, how is it different from good old rice pudding? I make mine on top of the stove, I like it creamy, not solid & baked. But, I have to say, I haven't made rice pudding since I met my DB, Kevin, which will be 19 years on the 19th Sept, this year!!

    I'm English born, so tend to use the recipes I got from my Nan & Mum. My Nan was great, she taught me to cook & how to sew on the old Singer treadle machine. Which reminds me, I still haven't taken up the 4 pair of new sleep pants I bought (on Sale) from Best & Less, my favourite clothes shop for big girls. I love their Woman Label & they have a newer label, Lily & Lou, but their sizes are 1 less than the Woman ones, if you know what I mean. So if you're a size 20 in a Woman label piece, you'll need to get a 22 in a Lily & Lou piece.   I got some really nice clothes there last year, tops with the handkerchief hem and etc Modern but not too extreme. But they are autumn/summer clothes, too cool for now!!  It's freezing here in Sydney, and I heard it was minus 7 degrees in Glen Innes this morning. I believe Brissie is cool too, my Bro-in-Law lives there, in Ascot (or is it Ascot Vale?!!) .... & says it's quite cool. I lived at West End in the 70's, and we had frost on the lawns in the morning, it was very cool, & would wear all these warm clothes, then carry them all home in the evening, as it was so warm!!  Ah, memories!!

    Yesterday I got dressed fairly early, as I was so cold, I had on 2 layers on bottom & 3 layers on top, including a very warm scarf, tucked in down over my chest, took off the bottoms when I had dinner in front of the TV, but when I woke up at 2.20am, I still had on the top 3 layers, (one of which was a big warm sweater),  including the scarf, boy was I warm.
    I had my bedding over my feet/legs, so they were nice & warm. Enough of feeling cold, must go & make that porridge.

    Let's know how the rice custard went, if you did make it.

    Hi hun, sorry i got side tracked the other night and never end up making it, ive been searching the web for recipes i can have without egg and limited lactose, then a friend end up popping over.  I will attempt it tomorrow night all going well.
    I live 85kms south of Cairns in the tropics, right now we are in our cool season but dry also, we have had some rain, but not the amount we get in the summer.  When i go to work at 6.30am on the banana farm im rugged up, a few days i had 4 layers of clothes on as it got down to 8 - 9 degrees, which is freezing for up here.  Its warming up now, had to have the ceiling fan on when i had my arvo nap today lol.
    Just about to post a new recipe for Chocolate cake, fructose free and egg free, turned out devine.
