Fourless Vanilla Cake

    I have posted these on the free forum site but as work has updated their webfilters again so I can't access this site lol.

    Ingredients
    200g almond meal
    1 teaspoon baking powder
    1 cup dextrose (you can use less if you like)
    3 eggs
    150 mls cream
    60g butter, melted and cooled slightly
    1 teaspoon vanilla or grated lemon rind for a different twist

    Method
    Mix almond meal, baking powder and dextrose in a bowl. In a separate bowl, mix eggs, cream, butter and vanilla. Mix wet ingredients into almond meal. Put in cake tin and bake at 180 degrees for around 30 minutes or until lightly golden and cake springs back when touched slightly.

    I bought my own almond meal (I cheated this time), and it turned out very well, you can get it from IGA 100g packs for $2.69. 100g would be around 3/4 cup. If you want an even fluffier cake, you can whip up the egg whites separately and mix them in last.  It seemed to have turned out more caramel then vanilla but it's still very lovely!
