I'm currently following a low carb diet and again Saturday afternoon was afternoon tea with family so I decided to try a flourless chocolate cake. It turned out well! It was a little bitter so add more dextrose if you need but it was great with whipped cream and it would be better served with strawberries on the side.
Ingredients
1/2 cup cocoa
1/3 cup hot water
2 teaspoons coffee
2 teaspoons boiling water
100g almond meal (just buy normal almonds and grind them yourself in a food processor)
1/2 cup dextrose
4 eggs, separated
Method
Preheat oven at 180 degrees and grease a 20cm deep cake tin (I done mine in a deep loaf tin).
Mix together cocoa and hot water in a bowl. Then in a cup mix together coffee and boiling water.
Mix coffee into cocoa. Add egg yolks and stir to combine each one. Mix in dextrose and almond meal.
Whisk egg whites in a separate bowl until soft peaks. Gently fold into cocoa mix.
Pour into cake tin and cook for around 20 minutes until cooked.
Serve with cream and ice with the chocolate glaze from the quit plan book (very delish!!)
