    I found this recipe for strawberry syrup. Not sure how long it will keep (I put it in  jars in the fridge) but it was perfect for Eton mess and would be lovely over icecream.

    250g strawberries
    1/2 cup glucose syrup
    pinch of salt

    Blend strawberries until smooth.
    Combine with  salt and syrup  in small  saucepan and bring to  boil.
    Reduce  heat and boil gently for 5 minutes.
    Makes almost 1.5 cups of syrup.
