I also put this over on the other forum also.
These taste great. The original recipe I found used a sachet of diet jelly, 1 tabsp gelatine, 1/2 cup boiling water.

Below is the dextrose version, made them this afternoon and love them.  You could make them more tart if you wanted to with more citric acid, then roll in dextrose for some sweet n sours.

    1/2 cup dextrose
    1/2 cup boiling water
    2 tabsp gelatine
    1 teasp citric acid
    colouring

I mixed it all together, but think I should have first added the gelatine to boiling water, then added the rest of the ingredients, but it still turned out great.

Pour into a plate or flat dish and leave to set in fridge (I was impatient and put in freezer for a few minutes), about 15 minutes. Then cut into thin strips for snakes, or cut into squares.  I think these would also work well in the silicone icecube shapes, maybe some Xmas ones.

I have put mine back in the fridge in a container, and they don't seem to stick together. I also left some in a container on the bench, and they don't seem to have melted, might do if it was a really hot day though.

    Hi Suzanne,

Sorry to be a bit dim, but do you still use the jelly crystals for flavour or does the citric acid do that.  I have never cooked with citric acid before.

    Cheers

The citric acid is for the flavour, so you do not use the diet jelly crystals if using the citric acid.  There are a few recipes in the forum that use citric acid (for lemon flavour).  If you want to go the low carb way and don't mind using diet jelly, I would use the first option, eg. diet jelly, gelatine and boiling water. Use different diet jelly for different coloured/flavoured snakes.   I prefer not to use diet jelly, and used dextrose and citric acid instead, and I also like the lemony tart taste.
They are really easy to make, and I imagine the recipe could be tweaked a little for individual tastes.
