No Bake Cheesecake

    I made the cheesecake the other day and I liked it but some people thought it was very lemony.  Today I made it with two mangos instead.  Bought a tray with some very ripe ones from the markets and just dices and put in instead of lemon.  Was not as set as lemon one but straight out of the fridge OK.  If taking out I would put more geletine.  Next time I will try passionfruit.

    The trouble is it taste so good I eat too much.  Better keep it for special occasions.

    Hi Jan,

    I too made the no bake cheesecake, and i added 3 passionfruit.  I also left the lemon in.  It was a bit too tart in places for me.  Perhaps my passionfruit weren't very sweet.  I never tasted them first.  Next time I would reduce the lemon by half perhaps.  And I too thought I would try it with mango.

    And it kept so well, I was still serving it up nearly a week after I made it.

    Oh, and I actually used the chocolate slice recipe for the base.  That was really yummy.  The only thing with that was it rose a little too high.  So next time I will change to half SR flour and half plain.

    You have to be careful not to reduce the lemon in no-bake cheesecake as the lemon is what makes it set.  Even if you use the wrong type of lemon it may not set as well.  So don't mess with the recipe in the amount of lemons!!
