Recipe - "Sugar- free" Banana Cake

    SUGAR-FREE BANANA CAKE

    INGREDIENTS

    2 cups of wholemeal flour
    2 teaspoons baking powder
    1/2 tsp bicarb soda
    60g butter or margarine
    1 egg
    1/2 cup finely chopped dates
    4 ripe banana well mashed
    1/3 cup milk

    METHOD

    Preheat oven to 180C 
    Sift flour, baking powder and bicarb soda 
    Cream butter and egg using electric mixer, add 1 x tblsp sifted flour mixture, mix well
    Stir in chopped dates and mashed banana's
    Fold in remaining flour mixture alternatively with milk
    Spread mixture into greased loaf tin (I also lined my tin with grease proof paper), and bake for 30mins.

    Test with skewer, cook for further 5-10mins if skewer not clean.

    Additional Topping

    I also added grated apple and a sprinkle of cinnamon to top cake mixture just prior to going into the oven which gave added moisture to the cake.

    (My husband took sample of the cake to work next day, but did not mention that it was 'sugarless' - was apparently enjoyed by all and one guy who loves sweet stuff, had "three" slices!)

    Hi Colleen,

    Are the dates OK?  I thought dried fruit was a no-no because of the extremely high fructose content?

    I love dried fruit, but maybe this is OK because it's a small amount in a whole cake ?

    Hi Jenny,

    Thanks for questioning this, good query...I haven't checked the book yet, maybe David G will answer in meantime...? 
    Perhaps dates could be substituted for something else...? dried pear.

    Thanks will try this out on Tuesday as i can get unlimited bananas and always make banana cake, now i can do it without sugar

    Thanks for the Bannana Cake Colleen, made it today and it is fantastic. Hot sraight out of the oven. Yum

    I didn't put the dates in as I don't like them, I also didn't put any topping on it as it was sweet enough just plain. Love that there is no sugar in it or dextrose, I don't really like the taste of dextrose.
