Toasted Muesli

    One of the things I really miss being sugar free is my toasted muesli in the morning, I had always made my own anyway but last night I put this one together which I really enjoyed this morning with some plain greek yoghurt, 1/4 sliced banana, a passionfruit and a few fresh blueberries - can't wait to wake up tomorrow and have it again.

    I think I will give you the methodology behind making muesli and you can add your own grains and nuts to your preference

    Dry Ingredients (mix together in a large bowl)
    3 cups whole rolled oats
    1/2 cup shelled pistachio nuts
    1/2 cup chopped pecans
    1/4 cup flaked almonds
    1/4 cup sesame seeds
    1/4 cup buckwheat grouts
    1/4 cup puffed millet
    1/4 cup sunflower seeds
    1/4 cup pepitas

    No need to be exact or use these exact grains,  this is about 5-6 cups of dry ingredients.  For gluten free use puffed rice instead of rolled oats, rice bran sticks would be good too.

    In a heat proof jug mix
    1/3 cup sunflower oil, about 1/2 cup of rice malt syrup. - microwave on medium about 1 min.
    (I would have liked to use about 1/4 cup prune juice or some apple juice concentrate, but not allowed!)

    Pour warm liquid over dry ingredients and mix well

    Spread mix over 2 large oven trays (lined with baking paper) and bake at 140deg C for about 35 mins, tossing every 10 mins.  You will know when it is ready as it will be completely dry but not burned.

    When cool, store in an airtight jar (glass or ceramic is better) - should keep for as long as it takes to eat it.

    NOTE that a 'serve' of muesli should be just over 1/3 cup, so keep a measure in your jar so you don't over do it. My in-laws must have nearly a cup in their bowl, OMG no wonder they never lose any weight.  Top up your bowl with thick yoghurt, and a bit of fresh fruit it will seem like a large bowl.

    I too have been making my own muesli - it's just a matter of adding whatever non-fructose ingredients you like.  After I have baked mine I add some oat bran for a little more fibre.  I use macadamias & almond flakes sometimes I use coconut flakes for a bit of a difference.

    Shows the sugar content as you mix!  Also allows you to do gluten free, wheat free etc.
