Pumpkin Scones

    Pumpkin Scones

    Ingredients:

    1 tblspn butter

    1/2 cup dextrose

    1/4 tsp salt

    1 egg

    1 cup mashed pumpkin - cold

    2 cups SR flour

    Method:

    1. Lightly grease a baking tray - line with baking paper if desired
    2. Beat together butter, sugar & salt with electric mixer
    3. Add egg, then pumpkin & stir in the flour
    4. Turn on to floured board & cut into about 12 scones (mixture will be a bit sticky, so have a little extra flour in a glass & dip knife into flour to help cut scones.  Alternatively, use scone cutter -dipped in flour if needed)
    5. Place in tray on top shelf of very hot over 225-250C for about 15 minutes or until slightly browned (will depend on oven)

    Scones are a bit tricky but the more you make, the better you get.

    Thank you for the recipe!  I wished I'd seen this earlier in the week when I made some using an adaptation of Lady Flo's recipe.  I used xylitol, but I also used roasted pureed pumpkin.  The pumpkin itself was so sweet that I probably didn't need any additional sweetener at all.

    I just did this exact recipe (without having read this post) that I adapted from the Lady Flo one, but I did the flour and butter in the fingertips method, then added the wet ingredients.

    Everyone at the afternoon tea though they were amazing!
