    Corn Flake Cookies

    Ingredients:

    2 cups plain flour

    1/2 tsp. baking powder

    1 cup dextrose

    250g butter

    2 eggs

    dash of vanilla

    1 1/2 cups corn flakes

    Method:

    1. Preheat oven to 180 degrees. Lightly grease a biscuit tray - I usually line mine with baking paper.
    2. Sift together flour & baking powder.
    3. Beat butter & dextrose together until light & fluffy.
    4. Add eggs & vanilla, beat well.
    5. Add sifted dry ingredients & corn flakes - mix well for about 2 minutes.
    6. Depending on preferred size of cookies - use either a teaspoon or tablespoon measure & place onto baking tray.
    7. Bake in a moderate oven for about 15 minutes of until lightly browned.

    Makes approx 30 - biscuits are not crunchy they are a softer texture but are very tasty.

    What is the sugar content of the corn flakes you use? I havent checked obviously because I've just steered clear of all cereals but I'm interested to know??

    You can look them up... they're around 8-9% sugar depending on the brand.

    You could use the wheat flakes with no added sugar, but it probably may not be as crunchy.

    Tina, you don't have to steer clear of all cereals you know, you can get terrific low or no sugar muesli's now, or make up your own. I found the Macro Untoasted muesli , (it's a Woolies brand) and it has whole almonds in it, and only 1.6 grams of sugar. I like to have it if I'm feeling like I will have something sweet, after dinner.  I add milk & warm it up so it soaks in, add a little cream on top. great dessert...it's delicious, and takes me ages to eat it, so makes me feel really full.

    Off topic a bit, I know, just thought you'd like to know about cereals. Another brand is Carman's, they do a fruit free Muesli, it's about 8 grams of sugar, but if you only have a small serve, now & again, I think that's acceptable, if you take into account your fructose/sugar for the day/week....
