I thought we needed some meals that were not just a replacement for a sugar fix. This is what I had for breakfast this morning.
Easy Peasy Omelette
2 eggs
little grated cheese
Salt & Pepper
Tomato Slices
Spinach
Olive Oil Spray
Beat eggs, cheese and salt & pepper together. Heat frying pan sprayed with a little olive oil. When heated tip mixture into pan. As it is cooking, top half the omelette with tomato slices and spinach.
When bottom is cooked fold in half and let sit for a couple of minutes. This will finish cooking the tomato and spinach. You can have a bit of toast with this if you want, but it is quite filling on its own.
