Ha ha how nice is it to have guilt free pancakes. We love having them on weekends with the dextrose jam or rice malt syrup (a replacement for my kids for maple syrup). Ours are a bit more basic though they're simply 1C SR Flour, 1 egg, 1C milk and a splash of vanilla. Double or triple for guests and reduce milk if you want thicker pancakes.
I'm also loving scones with home made jam and cream mmmmmmm.
