savoury snack muffins

    This is a great muffin recipe for either sweet or savoury muffins.

    Savoury veg muffins

    2 cups self raising flour              1 cup milk

    1 egg                                     1 good cup of zuccini grated

    1/4 cup oil                               1 cup of carrot grated

    1 cup of corn kernals                 1 cup of grated cheese

    2 tbs onion flakes                      salt and pepper to taste

    mix the flour, milk egg and oil before adding everything else. This is to my taste so if you want more veges, or different varieties, add what you wish. To make sweet ones take out the veges and add dextrose and cocoa to your taste.

    bake at 180C for 20-25 mins.

    Fiona I would suggest Olive oil after reading David's book on oils

    thought I would add to this that I use butter about 1/4 cup works out fine, I have only used zucchini cheese an ham in mine. really nice if you put a small amount of mixture in then half the ham and fan(not sure if thats the best way to describe it) it into the mix then add more mix in the middle 0f ham an bake, saw it done on better homes an garden.
