    Hi, I'm very new to this and am on day 13, having bought Dextrose and Glucose syrup I decided to cook the Anzac biscuits and banana muffins, however, I think I've gone wrong somewhere.  I followed the recipes exactly but the mixture of the Anzac biscuits was very runny so my biscuits turned out looking like rice paper!! but tasted good, now the banana muffins, I put the mixture into muffin paper cups so that may be where I went wrong, oh and they didn't rise very much.

    So I'm sure it's my bad cooking that's at fault and not the recipes, so can anyone help me and advise where I went wrong, please.

    Hi Sylvia,

    Your biscuit mixture, I'm thinking whether you may have added too much liquid or not enough flour, biscuit mixture you should be able to roll into a ball, it should be too dry but a nice moist ball.  Next time try adding in a little bit more flour, or pour the liquids in slowly and a bit at a time until you get the right consistency.  Muffins, only thing I can think of is to check the flour you used, I don't have the book on me so I don't know the recipe, but did you use self raising flour and if so how old was it? Also don't let the batter sit for too long, once liquids are mixed with the self raising flour it starts reacting and starts rising so the more you let it sit it won't rise in the oven (if you get me, but that's what I've read).  Give it another try and let us know how you go!

    I'll take your advice next time I cook the Anzac biscuits and banana muffins, got to eat this batch first! but hubby liked them so they wont hang around long.
